Garlic & Herb Karoo Lamb Chops

 Lamb loin chops
 crushed garlic
 rosemary
 thyme
 olive oil
 coarse sea salt
 black pepper

Rub the chops with olive oil, crushed garlic, and finely chopped herbs. Season generously with salt and pepper. Build a hot fire. Stand the chops upright on their fat caps first to crisp the fat (about 3–4 minutes). Lay them flat and sear for 3–4 minutes per side until medium-rare.
