
500 g thick-cut T-Bone steak

Coat the steak lightly in olive oil, then press both sides firmly into a plate of coarsely crushed black pepper and salt to form a solid crust. Place onto an intensely hot flame. Sear for 3 minutes on the strip-loin side, 2 minutes on the fillet side, then stand on the bone end for 2 minutes to cook from the inside out.
