 2 tbsp honey
 1 tbsp apple cider vinegar

Whisk mustard, honey, and vinegar together. Coat the pork chops well. Place fat-cap down first to crisp up, then lay flat over medium-high coals. Cook for about 6 minutes per side, making sure the glaze thickens into a golden crust without blackening.
