1 whole opened snoek
80 g butter
3 tbsp smooth apricot jam
2 tbsp lemon juice
minced garlic.

Melt butter, jam, lemon juice, and garlic together in a small pan. Pat the snoek dry and brush the flesh side with the sauce. Place the fish skin-side down on a well-greased grid over medium coals. Braai for 15–20 minutes on the skin side while basting. Turn over carefully for the final 5 minutes to brown the flesh.
