Thread alternating chicken and pineapple onto soaked skewers. Coat in sweet chilli and a dash of soy sauce. Cook over medium coals for 12–15 minutes, turning regularly and basting with extra sweet chilli sauce until the chicken is cooked through and the pineapple edges are slightly caramelised.
