Dear Etienne,
I dig a bit of salt on my steak when braaing. When’s the ideal time to salt it?
Brian
Howsit Brian,
Eish, here’s the deal with salting your steak, my bru. Three lekker times to do it:
- Throw that salt on the steak 40 minutes before you braai.
- Just before you toss it on the grill, give it another sprinkle of salt.
- Once it’s done sizzling on the grill, add some more salt if you fancy.
Now, why not at any other time, you ask? Well, if you salt the steak and don’t give it enough time (less than 10 minutes), the salt pulls out the juices but doesn’t have a chance to soak back in. So, your meat gets all dry and it’s a mission to get that lekker crispy crust. You gotta wait at least 40 minutes for the meat juices to do their thing and come back home. And hey, don’t even think about salting while you’re braaing, ’cause that salt will just stick to the grill and you’ll be scrubbing for days.
Here’s how to do the salt dance right every time:
- Give it a good salt rubdown at least 40 minutes before you braai. The salt makes friends with the meat juices, breaks down the muscle, and makes the flavor explode.
- Sprinkle some more salt just before you slap that steak on the grill. The juices stay put, and the heat makes a crispy crust all over.
- After the braai, if your steak’s already top-notch, you can skip the salt before and just sprinkle it on after. Salt and pepper to taste, my friend.
Braai on, and enjoy that tasty, juicy steak!
Groete, Etienne
